Chicken Breast with Grilled Tomato Sauce

Ingredients:

  • 4 chicken breasts, skinless and boneless (3 oz each)
  • 1 T minced garlic
  • 1 T olive oil
  • 1 cup diced fresh tomatoes
  • 1/3 teaspoon granulated sugar
  • 1 ½ teaspoon red wine vinegar
  • 1/3 tsp salt
  • ½ teaspoon black pepper
  • 2 teaspoons parsley

Directions:

  1. Grill chicken breasts until done, keep warm
  2. Saute garlic in oil until fragrant but not browned.
  3. Add tomatoes and sugar, saute until heated.
  4. Add vinegar, salt, pepper and parsley.
  5. Toss lightly and ladle ¼ cup sauce over cooked chicken breasts.
