Chocolate Cardamom Baked Oats

Ingredients:

  • 1 cup old fashioned oats
  • 1 large ripe banana
  • 2 eggs
  • 1 date
  • 1 teaspoon baking powder
  • ¼ teaspoon ground cardamom (can be found in the spice section of a grocery store)
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon salt
  • ¼ cup chocolate morsels

Directions:

  1. Preheat oven to 350 degrees.
  2. Coat three ramekins (small ceramic or glass dishes) with nonstick cooking spray.
  3. Add oats, banana, eggs, date, baking powder, cardamom, cinnamon and salt to blender; blend until smooth. Stir in chocolate morsels.
  4. Transfer mixture evenly into prepared ramekins.
  5. Place ramekins on baking sheet and bake 20 minutes until oat mixture puffs up and tops are golden brown.
