Recipe: Lime Cilantro Cauliflower Rice

Lime Cilantro Cauliflower Rice

Ingredients

  • 1 head cauliflower, cored
  • 1 Tablespoon water
  • 1 lime, zested and juiced
  • ½ cup chopped fresh cilantro
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Directions

  1. Grate cauliflower or pulse in a food processor until it resembles rice
  2. Put cauliflower and water in a microwave-safe covered dish. Cook in microwave on high, stirring twice, until tender, about 11 minutes
  3. Stir lime zest, lime juice, cilantro, salt and pepper into cooked cauliflower until combined
