Ingredients:
- 1 cup old fashioned oats
- 1 large ripe banana
- 2 eggs
- 1 date
- 1 teaspoon baking powder
- ¼ teaspoon ground cardamom (can be found in the spice section of a grocery store)
- ¼ teaspoon cinnamon
- ⅛ teaspoon salt
- ¼ cup chocolate morsels
Directions:
- Preheat oven to 350 degrees.
- Coat three ramekins (small ceramic or glass dishes) with nonstick cooking spray.
- Add oats, banana, eggs, date, baking powder, cardamom, cinnamon and salt to blender; blend until smooth. Stir in chocolate morsels.
- Transfer mixture evenly into prepared ramekins.
- Place ramekins on baking sheet and bake 20 minutes until oat mixture puffs up and tops are golden brown.
