Cucumber, Black Bean and Avocado Salad Recipe


  • 1 cucumber, diced
  • 1 can black beans, rinsed
  • 1 1/4 cups corn, drained
  • 1 red pepper, diced
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup fresh cilantro, chopped
  • 1 lime
  • 1 avocado, diced
  • Salt and pepper


  1. Place cucumber, black beans, corn, red pepper, cherry tomatoes and cilantro in a bowl.
  2. Cut lime in two halves. Squeeze the fresh juice from lime onto salad and stir well.
  3. Mix in avocado.
  4. Season with salt and pepper to taste.
  5. Enjoy!
