Ingredients:
- 1 cucumber, diced
- 1 can black beans, rinsed
- 1 1/4 cups corn, drained
- 1 red pepper, diced
- 1 cup cherry tomatoes, cut in half
- 1/2 cup fresh cilantro, chopped
- 1 lime
- 1 avocado, diced
- Salt and pepper
Directions:
- Place cucumber, black beans, corn, red pepper, cherry tomatoes and cilantro in a bowl.
- Cut lime in two halves. Squeeze the fresh juice from lime onto salad and stir well.
- Mix in avocado.
- Season with salt and pepper to taste.
