Mexican Stuffed Peppers

Ingredients:

  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, diced
  • 1 package low-sodium taco seasoning
  • 1 14.5 ounce can diced tomatoes
  • 1 4.5 ounce can green chiles
  • 1/2 package ranch dressing mix
  • 4 large red or green bell peppers
  • 1 cup Mexican cheese, shredded

Directions:

  1. Brown ground turkey, onion, celery and garlic.
  2. Add taco seasoning, diced tomatoes, green chiles and ranch dressing mix.
  3. Slice peppers in half lengthwise and remove seeds and membrane.
  4. Stuff peppers with turkey mixture.
  5. Bake in covered casserole dish at 375 degrees in the oven for 40 minutes.
  6. Uncover and sprinkle with cheese.
  7. Broil on low for three minutes or until brown.
